This Chairman Series wine is made from our best Cabernet Sauvignon block on the estate. It is a bold wine with layers of graphite, blueberry compote, and cassis fruit on the nose. The elegant tannin structure is complemented by abundant plum and blueberry flavors, with a complex finish consisting of espresso and black olive. This wine pairs well with prime or short rib, roast beef, venison or pasta dishes with dark meat-based sauces.

The 2021 Estate Cabernet Sauvignon captures the pure expression of our unique terroir at Lancaster Estate. It is a blend of the five of the red Bordeaux varietals we have planted on our volcanic hillside vineyards. The nose is rich with aromas of dark plum, tobacco and black pepper. The palate is deep and concentrated with flavors of black cherry, dark stone fruit, dried sage and a subtle earthiness. This wine should be decanted when young, and will only gain in complexity for the next 15-20 years.

The 2019 vintage opens with terroir-driven aromatics of crème de cassis, black cherry, baked plum and all-spice. These aromas carry through to a palate that is well structured and full-bodied, with youthful yet firm tannins. A long echoing finish provides additional notes of dark fruit, earth and toasted oak. Our 2023 “The” Cab is bright crimson color, with sage and currants in the nose. Medium bodied, it features youthful red fruits such as cherry and pomegranate in the mouth which are accented by sweet spice notes that are unveiled in the finish. This is a very versatile and food friendly Cabernet.

The color is like reddish black tar. The leading aroma is dominated by melted black and red licorice candy smells followed up by super-ripe or sunbaked blackberries. The oak contributes a vanilla extract headiness to the fruit and spice.

The 2018 Merus is a dark and powerful wine. Aromas of cassis and blackberry fill the nose, with undertones of vanilla bean, cedar and graphite. A full body and plush velvety tannins fill the mouth with deep flavors of saturated black fruits. Hints of vanilla and a fine grain oak texture from the 100% new French oak aging linger on the finish. Decant for one hour for maximum enjoyment.

Only produced in exceptional vintages, this incredible blend for our 2021 vintage was selected from the best barrels form our top Cabernet Sauvignon, Malbec and Petit Verdot blocks.
