Sebastiani Dolcino Rosso (NV)
Our Dolcino Rosso red blend is a rich, chewy and sensuous bottling. Bright ruby red in color, it has black cherry and Cabernet-spice aromas with subtle hints of coconut. The palate leads with fruit forward flavors and a persistent herbaceousness; the finish framed by soft tannins. - David Nakaji, Winemaker

87% Cabernet Sauvignon, 10% Petite Sirah, 3% Merlot
20 months in a combination of French, Hungarian and American oak
After harvest the grapes were destemmed, crushed and fermented in stainless steel tanks. All of the individual lots were vinified and aged separately until the final lot was determined. We started with 87% Cabernet Sauvignon and blended in Petite Sirah and Merlot for added structure, concentration and finesse. These varietals were aged in mixed oak with 20% new oak providing nice structure to the final blend.
This Dolcino Rosso is made up of fruit from Sonoma and Lake Counties. 47% of the fruit comes from the Red Hills in Lake County, 21% from Sonoma Valley and 8% from the Alexander Valley. The majority of this blend is made of Cabernet Sauvignon with some Petite Sirah and Merlot for added structure and concentration.
