2016 Three Rivers Sauvignon Blanc, Columbia Valley
The Sauvignon Blanc grapes were hand harvested on August 30th and gently whole cluster pressed upon arrival at the winery. The juice was allowed to settle at 50F, racked and inoculated with a varietal specific yeast. This 2016 Sauvignon Blanc displays nice clean fruity flavors and a bright acidity. Aromas of peach, lemongrass and pineapple give way to jasmine flower and citrus creating quite a complex bouquet.
Food Pairing Notes
This wine is absolutely delicious and will pair beautifully with soft rind cheese.

2016 started out with above average temperatures reaching record heat in April. This jumpstarted our growing season and led us to an earlier bloom than in 2015. Cooler June and July months slowed things down, allowing us to catch up in the vineyard. Temperatures heated back up in August leading us to pick our Sauvignon Blanc grapes on August 30th.
