Our 2016 Pinot Noir is a wonderful example of a cool climate Pinot Noir from the Sonoma Coast. Ruby in color, it opens with aromas of Maraschino cherry, clove and background hints of toasty oak. The palate is medium bodied showcasing flavors of cherry, jasmine and dusty cocoa. Its bright acidity is balanced by lingering tannins and sweet vanilla oak on the soft finish. Aged 6 months in new and used French and Hungarian oak
All lots were gently de-stemmed to preserve the whole berries. We cold soaked for an average of three days before inoculation. During fermentation the wine was pumped over its skins two to three times a day to enhance color and flavor extraction. Press fractions were kept and fined separately to remove harsh tannins. Lots with excessive, green tannins were fined with egg whites. Each lot was then transferred into new and used French and Hungarian oak barrels and aged for 6 months.
The 2016 vintage began with an early bud break and moderate temperatures throughout spring. The summer months were moderately tempered with few heat spells followed by cooler temperatures in August. This resulted in increased hang times allowing for slow, even ripening and balanced flavors. We harvested the fruit from September – October, 2016 at optimum ripeness.
