2016 Sebastiani Cabernet Sauvignon, Sonoma County
Bright ruby red in color, our 2016 Sonoma County Cabernet Sauvignon is filled with aromas of black cherry, Cabernet-spice, and coconut shavings. The palate has a medium body and offers concentrated fl?avors of blackberry, cassis, and savory herbs. Its mild tannins and balanced acidity lead way to a smooth and lingering finish. 14 months in 20% new French oak
After a three-day cold soak, the grapes were crushed and fermented at relatively warm temperatures in stainless steel tanks. After pressing, each lot was blended or egg-white fined depending on fl?avor, color and tannin concentration. The wine was aged for 14 months in new and 1 year old French oak barrels. A small portion of Zinfandel was added for balance, aromatics and fl?avor.
2016 produced exceptional quality fruit in Sonoma County. Warm temperatures in late winter and early spring pushed bud break ahead of schedule. A little unsettled weather during berry set led to some reduced yields, but overall we came in at the low end of average. The summer months were moderately warm with few heat spikes. Overall, the mild season gave us wines of ample ripeness and great complexity. We harvested the Cabernet Sauvignon fruit between September 10 - October 25, 2016.
