
2015 Ferrari-Carano Eldorado Noir (375 ml)
This velvety wine has a beautiful dark, purple color with lush aromas of rose
petals, dried blueberries, and caramel leading to a wine that bursts with luscious
blueberry, cherry pie and black raspberries on the palate.

Eldorado Noir is a truly unique dessert wine made from Black Muscat grapes
grown in the Russian River Valley.

Eldorado Noir is exceptional paired with rich, decadent chocolate desserts, as
well as vanilla bean ice cream or bread pudding with plum or persimmons.
Fruit-based tarts, shortcakes, fruitcakes, pumpkin pie, pecan pie or baked
apples also pair nicely with this wine.

Production Notes
The grapes from our Russian River Valley vineyard are sorted and destemmed
to a stainless steel tanks for three days of cold soaking. Following the cold
soak, yeast is added and pump-overs commence one to two times daily for the
duration of primary fermentation. Once fermentation is complete, the wine is
drained and pressed to neutral barrels for malolactic fermentation and five
months of cave aging before bottling in April 2018.
Vineyard Notes
The 2017 season began with record rainfall in the winter, filling our reservoirs
after four years of drought. Spring was mild, bringing favorable conditions
during bloom. As the season continued, we experienced more than an average
number of hot days early to mid-summer and record highs over Labor
Day. After the heat spike, harvest was delayed by a couple of rainstorms, but
fortunately, this did not affect the crop. The grapes were ready to be picked a
week earlier than the previous year.
