2015 Eos Reserve Cabernet Sauvignon, Paso Robles
This 2015 Reserve Cabernet Sauvignon fills the glass with a deep ruby color. Classic Cabernet aromas of dried cherr ies, black currants and cured meats lead into rich flavors of red fruits with an accent of spice from the oak aging. A balanced acidity accentuates the silky tannins and hint of black tea on the lingering finish.
100% Cabernet Sauvignon
16 months in French, Hungarian and American oak, 20% new
2015 was another dry year in Paso Robles. An extremely mild winter led to an early bud break. There were very few frost days as our warm and mild weather defined the rest of the growing season. The fruit was harvested during September through October which was a couple weeks ahead of schedule; however, quality was high across the board.
For a region that has been growing grapes since 1797, Paso Robles has all of a sudden become one of the “hottest” AVAs in California. Located midway between Santa Barbara and Monterey, this rolling countryside is synonymous with big, rich, high-character wines. The west portion of Paso Robles enjoys a moderately cool climate thanks to the influence of the nearby Pacific Ocean. This is great ground for Chardonnay. The inland east side is warm and sunny and perfect for Zinfandel, Petite Sirah, Syrah, Grenache, Cabernet Sauvignon and Merlot.
